CHICKEN PONGTEH – STEWED CHICKEN IN FERMENTED SOYA BEANS



Chicken pongteh is chicken stewed in fermented soya beans and gula Melaka which is a type of brown sugar. It tastes saltish and sweet. Traditionally, pork is used to cook this pongteh dish. However, since my son does not eat pork, I have been cooking this chicken version for as long as I can remember.

Ingredients
8 garlic cloves
10 shallots
2 big onions
5 potatoes
1 1/2 kg boneless chicken thighs
8 shitake mushrooms
2 Tbsp brown sugar
2 cinnamon sticks
10 dried cloves
2 star anise
1 Tbsp light soya sauce
2 Tbsp dark soya sauce
1 Tbsp sweet sauce
